Creating inlay tile patterns

Howdy!
How do you create inlay tile patterns on a wall, such as a different type of tile along a row one foot above a tub, then maybe another row above a couple of feet above that. So if the whole tub area is one tile, these rows would be something different. I know how to make custom materials and tiles, but don't know how to apply them as described above.
