simply do the math. In other words; you know how wide the house is at the outside of the frame or veneer dimension, lets use 30'. Assuming you have a standard (not special roof design) you know the pitch lets use 6" of rise in 12" of run. The center of the ridge would be 15' from the outside wall, multiplied by .5 or 6" of rise per foot of run, and you have 7'-6" of total rise in your roof. You add that dimension to the over-all top of top plate from finish floor elevation and that's your total height.
